A new type of miso that brings a delicate flavour to your dishes. Using a new production method called 'Cozy Koji Blend Method', which requires more than twice as many steps as traditional miso production, we carefully extracted the sweetness of koji to the fullest, resulting in an unprecedented taste and texture. Aiming for the best fermentation and maturation, our brewers experimented with every possible temperature, time and yeast condition to create an incredibly smooth, almost 'melt-in-your-mouth' rice koji. For this reason, we named this rice koji 'Cozy Koji', a play on words combining 'Cozy' and 'koji'. By using a large amount of koji to maximise sweetness, we achieved a fresh, fruity taste and juicy texture. It is also low in salt, which makes it delicious on its own. There are no set ways to enjoy it. Enjoy it as it is with your favourite ingredients or, of course, in miso soup. Try it however you like.
