This particular white miso paste has been fermented for a short time and contains less salt. What is special about it is that it also contains amazake, made from koji, a sweet drink obtained by fermenting rice, which brings a lot of sweetness and gives body to the miso. The colour of this miso becomes darker with time, but this is a natural process that has no effect on the taste. Since it contains a lot of koji, it is perfect for marinades, e.g. you can coat salmon or marinate pork ribs before cooking them on the barbecue. You can also use it in sauces, in mashed potatoes instead of milk or in soups instead of cream.
