Miso soup is a traditional Japanese soup consisting basically of broth, specifically dashi mixed with miso paste, a fermented soybean paste with many uses in cooking, where it is often used for marinating or gratinating. The basis of miso soup is dashi, a foodstuff composed of dried skipjack tuna flakes (katsuobushi) and a large seaweed called kombu. There is no need to add salt, as miso, by nature, is already very salty. In this broth, the miso paste is dissolved to make soup, to which cubes of tofu and other varieties of seaweed (wakame, for example) can be added. The variation of aka miso soup is in being based on red miso with a stronger flavour than white miso.
