Miso is a fermented cereal paste that is a basic ingredient in Japanese cuisine. Red miso has a more pronounced taste than brown and white miso. The fermentation time is longer. For soup it is often combined with seafood and strong-tasting vegetables such as shiso or grilled vegetables. It has a deep, umami-rich flavour. It can be used to prepare miso soups or marinate meats and vegetables and is also delicious diluted in purees or soups.
