Yuasa Farm’s Organic Umeboshi Vinegar is a traditional Japanese condiment made from the liquid that forms naturally during the preparation of umeboshi. The organic ume plums are grown by Yuasa Farm at the foot of Mount Haruna, in the city of Takasaki, Gunma Prefecture: one of Japan’s main ume-producing regions. The farm has been growing and processing ume plums for five generations, continuing a family tradition dating back around a hundred years.
During processing, the ume plums are salted. As a result of the salting process, they gradually release their natural juice, producing ‘umezu’, known in Italy as umeboshi vinegar. It is therefore not a common flavoured vinegar, but a genuine Japanese condiment derived from the traditional production of umeboshi.
This version is particularly simple: it contains only organic ume and salt, with no shiso and no added sugar. The salt used is the traditional Japanese sea salt Umi no Sei, as indicated on the packaging. The result is a condiment with a strong flavour, pleasantly fruity, very tart and naturally savoury. For this reason, just a small amount is enough to give a dish its character, and it can be used to replace both vinegar and some of the salt.
