Known in Japanese as sushi-su (寿司酢), it is added to freshly cooked rice to give it the characteristic balance of acidity, sweetness and savouriness typical of Japanese cuisine. Unlike plain rice vinegar, sushi vinegar is usually pre-seasoned and balanced, making it particularly convenient for preparing sushi, maki, nigiri, chirashi and onigiri at home.
