Tosazu translates as 'Tosa vinegar' and is closely related to the region of Tosa, now known as Kochi, on the island of Shikoku, famous for its exceptional bonito. Tosazu vinegar is mainly prepared using dashi, a traditional Japanese broth made from bonito and kombu seaweed. The recipe also includes soy sauce and mirin, giving this vinegar a unique flavour profile characterised by intense smoky notes.
