Ginkoubai Hannya Tou (吟香梅 般若刀) is one of the most original interpretations of Japanese umeshu produced by Ippongi Kubo Honten, a historic distillery in Fukui Prefecture. Its distinctive character is evident from the very first sip: initially, the palate is enveloped by the rich sweetness of the ume, but shortly afterwards a characteristic spicy and pungent note emerges, courtesy of the addition of chilli. The result is a striking contrast between sweet and spicy, very different from classic ume liqueurs. The producer crafts it using sake, ume plums grown in Fukui Prefecture, candied sugar, shochu and chilli, achieving an alcohol content of 12% vol.
The name Hannya Tou – 般若刀 and the Hannya mask depicted on the label perfectly highlight the character of the product: behind a seemingly sweet first impression lies a decidedly more intense and sharp flavour. It is a particularly interesting liqueur to enjoy with a meal. The distillery recommends it with meat, rich dishes, strongly flavoured dishes and dishes characterised by sweetness and intensity, where the contrast between ume and chilli comes into its own. It can also be served as an original after-dinner liqueur, especially for those who find standard umeshu excessively sweet.
