Kikkoman Tokusen Marudaizu Shoyu (特選 丸大豆しょうゆ) is a premium-quality Japanese soya sauce, characterised by the use of whole soya beans – marudaizu (丸大豆). Unlike many soya sauces produced using soya from which the oil has been previously removed, Marudaizu uses the whole bean. During fermentation, some of the oils naturally present in the soya contribute to the development of greater smoothness, aromatic roundness and depth of flavour.
Kikkoman describes Tokusen Marudaizu as a particularly well-balanced soy sauce, with a refined aroma, a delicate yet rich flavour and a pronounced umami component. The designation ‘Tokusen’ (特選) also identifies a soy sauce belonging to a higher quality category according to Japanese standards. It is extremely versatile and can be used both directly at the table and during the preparation of dishes.
