It is produced using only water, soya beans, wheat and salt, which are left to ferment and mature naturally using the traditional Japanese honjozo method.
The long fermentation process allows for the natural development of a complex flavour profile and a pronounced umami component, accompanied by savoury, slightly sweet, tangy and malty notes. It is an all-purpose soya sauce, designed to be used both as a condiment in its own right and during the preparation of dishes.
