White soy sauce is a delicacy originating in the Aichi region, famous for its lush wheat fields and excellent water springs. Unlike traditional varieties of soy sauce, this one is made using 90% wheat and only 10% soybeans. Its unique formula gives it a clear, almost transparent colour and a delicate, balanced and harmonious flavour. The characteristic flavour profile is the result of the breakdown of wheat proteins, which is further enhanced by the natural, sun-dried salt from Mexico. The result is a sauce with a fine and sophisticated taste, rich in umami and perfectly balanced.
