In September 2010, Kikkoman started selling freshly pressed nama-shoyu (raw soy sauce) in Japan. This unique soy sauce is sold in a special airtight container that keeps its freshness for up to 90 days after opening. Usually, naturally fermented soy sauce is heated to intensify its colour, flavour and aroma. Freshly pressed raw soy sauce, on the other hand, is not heated; it is therefore characterised by a delicate, sweet smell and taste, and a rich, clear colour. The new container used for raw soy sauce products was developed by Kikkoman and adopts a cap with a non-return valve that allows the soy sauce to escape, but prevents air from entering.
