Shiho-no-Shizuku is a pure, unheated soy sauce that still contains food-softening enzymes. It has a rich flavour and a delicate woody scent that gently wafts in the mouth. This soy sauce is made according to the traditional Japanese method, which involves fermenting soybeans in wooden barrels. This creates a rich but delicate flavour with woody notes, lacking the pungent savouriness often found in less refined soy sauces. Unpasteurised and fermented in centuries-old wooden barrels, it produces a rich, complex and aromatic flavour.
