Soy sauce produced by Kikkoman in the Select Extra edition. The evaluation of soy sauce is based on the measurement of its chemical composition, especially by amino acids and alcohol content. At the first grade we find the tokkyuu soy sauce, at the second the ikkyuu and at the third (and standard) grade we find the hyoujun. The Japanese Soy Sauce Association adds two more special grades above the first, Extra Select soy sauce which is Tokusen, and Ultra-Extra Select which is choutokusen.
