Matcha is a prized variety of green tea originating in Japan. It comes in the form of a very fine powder, historically deriving from the ground Chinese tea known as mocha. Its uniqueness lies in its cultivation method, which is carried out in the shade using a technique known as 'covered cultivation', and in the processing that excludes the rolling process. As a result of growing in shaded environments, matcha develops an intense bright green colour and increases the concentration of amino acids, particularly theanine, which gives it its characteristic umami flavour. This innovative technique took shape in Japan during the Muromachi period, consolidating over time the colour and taste peculiarities that make matcha recognisable and appreciated worldwide.
