Matcha is the finely processed Japanese green tea mainly used in the traditional tea ceremony. The leaves are steamed, dried and ground into a fine powder; there are two types, koicha (thick) which comes from plants over 30 years old, and usucha (thin) which comes from plants under 30 years old. Matcha tea is also used as a spice or natural colouring agent in foods such as mochi or soba, green tea ice cream and a huge variety of wagashi. The preparation and consumption of powdered tea was defined in Buddhist Zen ritual. The earliest extant Zen monastic code, the Chanyuan qinggui (Purity Regulations for a Zen Monastery, 1103), details the etiquette for tea ceremonies.
