This is a high-quality Junmai sake, which means that the alcohol in the bottle is produced exclusively by fermentation. Furthermore, it is a Daiginjo: the rice grains have been polished so that only the original 50% remains. The rice used is Yamada-nishiki, considered the king of sake rice. The appearance is straw yellow in colour with greenish highlights, medium clarity with fairly fluid and irregular tears. The initial aroma is very captivating and suggests a superior quality. This sake is complex and precise. Aromas of fresh pineapple (50% polish), lime and lemon peel are present. The palate is generous and silky, with noticeable residual sugars balanced by fresh, vibrant acidity. Glycerol adds volume and roundness, while a subtle saltiness structures the whole. Minerality guides the palate with precision and umami is perceptible in the background. The aftertaste is fragrant and the finish is balanced and persistent with cereal notes.
Ideal with: raw fish (sashimi, tartare), sushi, scallops with shallots, sun-dried tomatoes and bonito chips, as well as with desserts and some cheeses. Serving temperature: Best enjoyed cold.
