The flavour is mineral and structured, with a crystal-clear umami, cloaked in a light spicy note reminiscent of paprika and pepper. A very small amount of alcohol is added at the end of fermentation to dampen the aromas that would otherwise be too intense, making it very balanced and perfect for any dish.
Ideal with: pork, beef tartare, fried food.
