Shirataki are traditional Japanese noodles made from the konjac root (Amorphophallus konjac), which is rich in glucomannan. They are transparent, with a chewy texture and a neutral flavour that goes well with any sauce. With just 5–10 kcal per 100g, they are the ideal alternative to traditional pasta for low-carb or ketogenic diets, or for anyone simply looking for a light meal without compromising on flavour. Rinse thoroughly under running water to remove the typical konjac odour, then briefly dry-fry in a pan to improve the texture. Ideal in soups (sukiyaki, ramen), stir-fries and cold salads.
