Niboshi or dried sardines are perfect for preparing typical Japanese soups. Simply boiling them together with the ingredients releases all the umami they contain. It is particularly popular as a base broth when preparing miso soup. Niboshi dashi is made by soaking niboshi in natural water. If left overnight or brought almost to the boil, the flavour of the sardines permeates the water and makes a popular broth.
