Katsuobushi

Katsuobushi is a Japanese cuisine ingredient obtained by grating tuna (katsuo) into flakes, dried, fermented and smoked. It is used in the preparation of various foods, such as: soba, miso soup and dashi broth. It is also used as a topping on takoyaki and okonomiyaki.
