Umeboshi is a popular condiment in Japanese cuisine made from salted plums. Japanese plums, i.e. the fruits of the Prunus mume tree that have reached maturity, are usually used. The natural colour is an orangey brown, given by the β-carotene content; however, it is often preferred to colour the umeboshi to a more pleasant red colour. The colouring is done using the leaves of shiso, an aromatic plant, which is very rich in anthocyanins. Umeboshi has a pronounced sour and salty taste mainly due to the steeping of the plums in salt.
