Sugimoto shiitakes are cultivated using a 1,000-year-old traditional Japanese cultivation approach using special oak logs with sweet sap. These shiitakes are grown 100% by local farmers in Kyushu, a southern island of Japan. Sweet Sap Oak tree trunks are recognised in Japan as producers of the Shiitake with the best taste and texture.
The drying process used by Sugimoto lowers the moisture content to less than 9%, which better preserves the flavour of the shiitake and increases the vitamin D content by as much as 15 times.
These shiitakes contain the highest amount of vitamin D and are perhaps the only Kosher-certified shiitakes grown 100% in the natural forest.
