beni shoga is a special type of tsukemono ginger, a typical Japanese cooking system for making pickles. The ginger is cut into thin strips or coarsely chopped and marinated in umezu, the same solution used to marinate plums and make umeboshi. The typical red colour comes from the shiso variety of perilla, which is diluted in umezu. It is served raw to flavour various dishes such as gyūdon, okonomiyaki, takoyaki and yakisoba. It should not be confused with the other tsukemono called gari, which involves marinating slices of ginger in a solution of vinegar and sugar and is eaten with sushi.
