Honkaeshi tsuyu - 340ml - Morita
A delicate and refined flavour achieved through Morita's secret soy sauce recipe. Product Features "Hon-gaeshi" is a traditional method of dissolving sugar in soy sauce and mirin, heating the mixture and then letting it sit at a low temperature to achieve a milder flavour. A savoury broth prepared with Morita's secret 'hon-gaeshi' (a type of soy sauce made from whole soybeans) and a carefully selected dashi broth. We internally extract three types of bonito flakes (coarsely dried bonito, dried bonito and mackerel) and combine them with a dashi made from rishiri seaweed, mackerel, sardines and shiitake mushrooms. Compared to the previous product, this version uses about 1.2 times the amount of bonito flakes and has been enriched with shiitake mushroom broth for a more intense flavour.
