Made by infusing honjozo sake with ume and matcha tea leaves only from Shizuoka Prefecture, where the winery is located. The flavour is intense and the astringent matcha flavour softens the typical acidity of the plums, making it smooth and balanced while the lactic note from the sake produced by the Yamahai method makes it even creamier.
