Unlike other types of rice, glutinous rice becomes very sticky when combined with hot water, which makes it perfect for making mochi. Wash the rice under cold running water until the water is almost clear. Place the sweet rice in a bowl and cover with cool water. Let it stand for 12 hours or overnight, then drain it. Spread the sweet rice in a thin, even layer on a colander, sieve or steam rack lined with a cloth. Cover with a lid and cook in boiling water for 25 minutes. Sprinkle lightly with salt, then steam for a further 20-25 minutes, or until rice is tender and translucent.
