Kinako (きな粉) is a flour made by grinding roasted soya beans and is one of the most commonly used traditional ingredients in Japanese confectionery. This version is produced using whole soya beans – 丸大豆 (marudaizu) – which undergo double roasting, a feature highlighted on the packaging by the phrase 香り豊かな二度焙煎, meaning ‘double roasted for an intense and fragrant aroma’. The roasting process gives kinako its characteristic golden-beige colour and a warm, delicately nutty flavour profile.
On the palate, it is slightly reminiscent of nuts, whilst retaining the characteristic flavour of soya. In Japan, it is traditionally used as a topping for mochi and wagashi, often alongside sugar, but it can also be used to make creams, drinks, ice cream and a wide variety of desserts.
