Processed in kioke, the precious Japanese wooden barrels, which leave a slight imprint on the finish. It uses white koji, which releases citric acid and is made by the kimoto method, which gives it a hint of creamy lactic acid. The umami is rich but sophisticated and the finish is clean but lasting.
Ideal with: lobster, white fish, chicken.
