Tonkatsu is a type of wa-shoku, a Japanese dish of thick slices of pork breaded in beaten eggs, flour and panko (Japanese breadcrumbs) and fried in hot oil. Finely chopped raw cabbage and a hearty sauce perfectly complement the crispy fried tonkatsu. This sauce, with its sweet, thick consistency, owes its rich, umami flavour to vegetables and fruit. Although it goes naturally with Tonkatsu, it can also be used with Okonomiyaki and other stir-fried dishes.
