The flavour opens crystal clear and austere, but is soon coloured by flashes of ripe fruit such as apple and pear, which round it off and soften it. The crisp umami cuts through a slightly mineral base, which leaves the mouth feeling fresh. Ideal with foods such as: white fish, chicken, vegetables.
