"Koji' (or rice malt) is used in the fermentation process of miso, sake, soy sauce and other foods. Shio Koji is a traditional Japanese condiment made from fermented Koji rice and salt. It has a natural flavour and colour and contains no additives. It is very versatile and can be used on many occasions and is extremely easy to use. The volume to be used is 10% of the weight of the meat, fish or vegetables to be seasoned. Let the Koji Shio rice malt permeate and then rub in.
