Hijiki seaweed is a brown seaweed from the Far East that grows on rocks at the water's edge with cylindrical, green-black, hard leaves: it is among the richest in minerals (calcium, potassium, iron). It has particular remineralising, healing and cholesterol-lowering properties: it is useful in cases of osteoporosis, asthenia, brittle tooth enamel. For use in the kitchen after soaking for 30 minutes (better to change the water several times, every 10 minutes for example) it can be cooked in water for 20 minutes on its own or with other vegetables, or sautéed with onions or steamed with rice.
