White soy sauce comes from Aichi, one of the most wheat-producing regions of Japan, also recognised in the archipelago for its tasty waters. Unlike conventional soy sauces, it is made with 90% wheat and 10% soy. It is this important use of wheat that gives the sauce its clear, almost transparent colour. It is a quality product made with time and effort using carefully selected wheat and soya.
